Ingredients

  • 500 g Mutton (goat meat) cut into pieces
  • 2 large Onions finely sliced
  • 3 medium-sized Tomatoes finely chopped
  • 2 tablespoons Ginger-garlic paste
  • 1/4 cup Yogurt
  • 4 tablespoons Cooking oil
  • 2 Bay leaves
  • 1 inch piece Cinnamon stick
  • 4-5 Cloves
  • 2-3 Green cardamom pods
  • 1 teaspoon (adjust to taste) Red chili powder
  • 1/2 teaspoon Turmeric powder
  • 1 tablespoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala powder
  • to taste Salt
  • Fresh coriander leaves for garnishing

Instructions

Marinating Mutton

  • In a bowl, combine mutton pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Allow it to marinate for at least 1 hour.

Cooking Mutton Curry

  • Heat oil in a heavy-bottomed pan. Add bay leaves, cinnamon stick, cloves, and green cardamom pods. Sauté until the spices release their aroma.
  • Add sliced onions and cook until golden brown. Introduce chopped tomatoes and cook until they are soft and the oil starts separating.
  • Mix in coriander powder, cumin powder, and garam masala powder. Stir well. Add the marinated mutton and cook on high heat until browned on all sides.
  • Reduce the heat to low, cover the pan, and let the mutton cook in its juices for about 30-40 minutes or until tender. Adjust the consistency of the curry with water if needed.
