Instructions

Prep the Vegetables:

  • Wash all the vegetables thoroughly. Peel and dice the carrots and potatoes. Chop the beans, bell peppers, and cauliflower into bite-sized pieces.

Cook the Vegetables:

  • Boil the carrots, beans, peas, cauliflower, and potatoes until just tender. Do not overcook. You can also steam them if preferred. Drain and set aside.

Prepare the Gravy:

  • Heat oil in a large pan. Add cumin seeds and let them splutter.
  • Add the finely chopped onions and sauté until they turn golden brown.
  • Stir in the ginger-garlic paste and cook for a minute until the raw smell goes away.
  • Pour in the pureed tomatoes and cook until the oil begins to separate from the mixture.

Add Spices:

  • Add turmeric powder, red chili powder, and coriander powder to the tomato mixture. Cook the spices for a few minutes until they’re well integrated and aromatic.

Combine Vegetables and Gravy:

  • Add the pre-cooked vegetables to the pan and mix well with the gravy.
  • If the mixture is too dry, add a little water to achieve a thick gravy consistency.

Final Touches:

  • Add salt to taste and let the mix veg simmer for 5-7 minutes on low heat, allowing the flavors to meld.
  • If using, stir in the cream or coconut milk for a richer, more indulgent gravy.
  • Crush the kasuri methi between your palms and sprinkle over the dish. Add garam masala and give it one final stir.
