Ingredients

  • 500-700 g chicken ,bone-in pieces
  • 2 tablespoons oil or butter
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 3 carrots peeled and sliced
  • 2 potatoes peeled and diced
  • 1 cup celery chopped
  • 1 cup green beans chopped
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 1/4 cup Cornfloor (optional, for thickening)
  • Fresh parsley for garnish

Instructions

Brown the Chicken:

  • In a large pot, heat oil or butter over medium heat. Brown the chicken pieces on all sides. Remove and set aside

Sauté Vegetables:

  • In the same pot, add chopped onions and garlic. Sauté until softened.
  • Add carrots, potatoes, celery, and green beans. Cook for a few minutes until they begin to soften.

Simmer with Broth and Herbs:

  • Return the browned chicken to the pot. Pour in chicken broth, and add bay leaf, thyme, rosemary, salt, and pepper.
  • Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes until the chicken is cooked and vegetables are tender.

Optional Thickening:

  • If you prefer a thicker stew, mix 1/4 cup of cornflour with a little water to create a smooth paste. Stir this into the stew and simmer for an additional 10 minutes.

  • Discard the bay leaf. Garnish with fresh parsley.
