Ingredients

For the Cauliflower Koftas:

  • 1 medium-sized cauliflower grated
  • 2 medium-sized potatoes potatoes boiled and mashed
  • 1/2 cup besan (gram flour)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • to taste Salt
  • Oil for frying

For the Kofta Curry:

  • 2 large onions finely chopped
  • 3 large tomatoes pureed
  • 1 teaspoon ginger-garlic paste
  • 1/2 cup cashew nuts soaked and ground into a paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon (adjust to taste) red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 cup fresh cream
  • to taste Salt
  • Oil for cooking
  • Fresh coriander leaves for garnish

Instructions

Making Cauliflower Koftas:

  • In a mixing bowl, combine grated cauliflower, mashed potatoes, besan, ginger-garlic paste, turmeric powder, red chili powder, and salt.
  • Mix well to form a dough. Shape small portions into round koftas. Heat oil in a pan and deep fry the koftas until golden brown. Set aside on a paper towel to absorb excess oil.

Preparing Kofta Curry:

  • In a separate pan, heat oil. Add cumin seeds and let them splutter. dd chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and cook until the raw smell disappears.Add tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
  • Pour in the cashew paste and cook for a few more minutes. Add garam masala and fresh cream. Stir well.
  • Gently place the fried cauliflower koftas into the curry. Simmer for 5-7 minutes, allowing the koftas to absorb the flavors.

Garnish and Serve:

  • Garnish with fresh coriander leaves.
