Ingredients

For the Dough:

  • 2 cups whole wheat flour
  • Water for kneading
  • to taste Salt

For the Potato Filling:

  • 3 medium-sized potatoes boiled and mashed
  • 1 small onion finely chopped
  • 1-2 green chilies finely chopped
  • 1 teaspoon ginger grated
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Fresh coriander leaves chopped
  • to taste Salt
  • Ghee or oil for cooking

Instructions

Prepare the Dough:

  • In a mixing bowl, combine whole wheat flour, salt, and water as needed to form a soft, pliable dough.
  • Knead the dough well, cover it with a damp cloth, and let it rest for at least 15-20 minutes.

Make the Potato Filling:

  • In a separate bowl, mix boiled and mashed potatoes with chopped onions, green chilies, grated ginger, cumin seeds, coriander powder, garam masala, chopped coriander leaves, and salt. Ensure it forms a uniform mixture.

Assemble the Aloo Paratha:

  • Divide the dough into equal portions and roll them into balls. Take one dough ball, flatten it, and place a portion of the potato filling in the center.
  • Seal the edges and roll it into a round paratha, dusting with flour to prevent sticking.

Cook the Aloo Paratha:

  • Heat a griddle or flat pan over medium heat.
  • Place the rolled paratha on the hot griddle. When bubbles appear, flip it. Brush ghee or oil on both sides and cook until golden brown spots appear.
  • Repeat the process for the remaining dough balls.
