  • 1 large can 28 ounces diced tomatoes
  • 1 jar 24 ounces marinara sauce (or homemade)
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup fresh basil chopped

For the Cheese Mixture:

  • 15 ounces ricotta cheese or cottage cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon nutmeg
  • Salt and freshly ground black pepper to taste

For Assembly:

  • 9 no-boil lasagna noodles
  • 2 cups shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

Step 1: Prepare the Vegetables

  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the red bell pepper, zucchini, carrots, and mushrooms. Cook until the vegetables are tender and slightly caramelized, about 10 minutes.

  • Add half of the sautéed vegetables on top of the ricotta mixture.
  • Sprinkle 1/2 cup of shredded mozzarella cheese over the vegetables.
  • Repeat the layers: 3 lasagna noodles, remaining ricotta mixture, remaining vegetables, 1/2 cup mozzarella cheese.
  • Top with the final 3 lasagna noodles, remaining tomato sauce, and the remaining mozzarella cheese.

Step 5: Bake the Lasagna

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 35 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let the lasagna rest for 10-15 minutes before slicing and serving.
