Ingredients

For the Chenna

  • 1 liter Full-fat milk
  • 2 tablespoons Lemon juice or vinegar

For the Sugar Syrup

  • 1 cup Sugar
  • 4 cups Water
  • 2-3 Cardamom pods crushed

Instructions

Preparing Chenna Balls

  • Boil the milk in a heavy-bottomed pan. Once it boils, add lemon juice or vinegar gradually while stirring, until the milk curdles.
  • Drain the whey using a muslin cloth, leaving behind the chenna. Knead the chenna until it becomes smooth and forms a soft dough-like consistency.

Making Rosogolla

  • Divide the chenna into small portions and roll them into smooth, crack-free balls.
  • In a separate pot, combine sugar, water, and crushed cardamom pods. Bring it to a boil, stirring to dissolve the sugar.
  • Gently drop the chenna balls into the simmering sugar syrup. Cover the pot and let the rosogollas cook on medium heat for 15-20 minutes.
  • Check for doneness by gently pressing a rosogolla. It should spring back.
  • Allow them to cool in the sugar syrup for a few hours.

Serve

  • Once cooled, refrigerate and serve chilled.
  • Garnish with chopped pistachios or saffron strands if desired.
