  • 1 cup Fresh Fenugreek Leaves (Methi) finely chopped
  • 1 inch piece Ginger grated
  • 1 Green Chili finely chopped (optional)
  • 1/2 teaspoon Ajwain (Carom Seeds
  • 1/4 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder (optional)
  • to taste Salt
  • Oil or Ghee for cooking
  • Water as needed to knead the dough

Instructions

Prepare the Dough:

  • In a large mixing bowl, combine the whole wheat flour, chopped fenugreek leaves, grated ginger, chopped green chili, ajwain, turmeric powder, red chili powder, and salt.
  • Gradually add water and knead to form a smooth and pliable dough. The dough should be soft but not sticky.
  • Drizzle a little oil over the dough, cover with a damp cloth, and let it rest for at least 15-20 minutes.

Rolling the Parathas:

  • Divide the dough into equal-sized balls, about the size of a golf ball.
  • Dust the rolling area and the dough ball with a little wheat flour.
  • Roll out each dough ball into a circle approximately 6 inches in diameter. Try to roll evenly so the paratha cooks uniformly.

Cooking the Parathas:

  • Heat a tawa or frying pan on medium heat. Once hot, place the rolled paratha on the tawa.
  • Cook until small bubbles appear, then flip to the other side. Brush with a little oil or ghee and flip again.
  • Press gently with a spatula, apply oil on the other side, and cook until both sides have golden brown spots.
  • Repeat the process with the remaining dough balls.
