  • 1/4 cup Peanuts
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon (optional) Sugar
  • 1 tablespoon Lemon Juice
  • to taste Salt
  • Fresh Coriander Leaves for garnishing
  • 2 tablespoons Oil
  • Water for rinsing poha
  • Sev (crispy gram flour noodles) for garnishing (optional)

Instructions

  • Prepare the Poha: Rinse the poha in a colander under running water until it softens. Drain the water completely and set aside. The poha should be moist but not mushy.
  • Roast the Peanuts: Heat a pan and dry roast the peanuts until they are crunchy. Remove and set aside.
  • Temper the Spices: In the same pan, heat oil. Add mustard seeds and let them crackle. Add cumin seeds, green chilies, and curry leaves. Sauté for a few seconds.
  • Sauté the Onions: Add the chopped onions and sauté until they turn translucent.
