Ingredients

  • 1 liter Full fat milk
  • 2 tablespoons lemon juice or vinegar
  • 1/2 cup (adjust to taste) powdered sugar
  • A few strands of saffron (optional)
  • 1/2 teaspoon cardamom powder
  • Chopped pistachios or almonds for garnish

Instructions

Curdling the Milk:

  • Heat the milk in a heavy-bottomed pan until it comes to a boil. Add lemon juice or vinegar gradually while stirring until the milk curdles.
  • Once the whey separates from the curd, strain it using a muslin cloth to get fresh chenna.

Preparing the Chenna:

  • Hang the chenna for 1-2 hours to remove excess water.
  • Knead the chenna on a flat surface until it becomes smooth and soft.

Making Sandesh:

  • In a non-stick pan, cook the chenna on low heat, stirring continuously. Add saffron strands if using and continue cooking until the mixture thickens.
  • Add powdered sugar and cardamom powder. Mix well.
  • Cook until the mixture leaves the sides of the pan and forms a dough-like consistency. Remove from heat and let it cool slightly.

Shaping the Sandesh:

  • Take small portions of the mixture and shape them into small, flat discs or round sandesh.
  • Garnish each sandesh with chopped pistachios or almonds.

Serving:

  • Let the sandesh cool completely before serving. Refrigerate for a few hours to enhance the texture and flavor.
