Ingredients

For the Aloo Masala:

  • 3 tsp oil
  • ½ onion sliced
  • 1 tsp ginger-garlic paste
  • ¼ tsp turmeric powder
  • ½ tsp Kashmiri red chili powder
  • ¼ tsp coriander powder
  • ¼ tsp cumin powder
  • ½ tsp chaat masala
  • 3 potatoes boiled and mashed
  • ½ tsp salt

For the Batter:

  • 1 cup besan gram flour
  • 2 tbsp rice flour
  • ¼ tsp Kashmiri red chili powder
  • ¼ tsp turmeric powder
  • ¼ tsp ajwain carom seeds
  • ½ tsp salt
  • ¼ tsp baking powder
  • ¼ cup water
  • Oil for frying

Instructions

Step 1: Prepare the Aloo Masala

  • Heat 3 tsp oil in a large pan.
  • Add ½ sliced onion and sauté until golden brown.
  • Add 1 tsp ginger-garlic paste and sauté until the raw smell disappears.
  • Add ¼ tsp turmeric powder, ½ tsp Kashmiri red chili powder, ¼ tsp coriander powder, ¼ tsp cumin powder, and ½ tsp chaat masala. Sauté on low flame.
  • Add 3 boiled and mashed potatoes and mix well.
  • Take small portions of the potato mixture and shape them into flat patties.

Step 2: Prepare the Batter

  • In a bowl, mix 1 cup besan, 2 tbsp rice flour, ¼ tsp Kashmiri red chili powder, ¼ tsp turmeric powder, ¼ tsp ajwain, ½ tsp salt, and ¼ tsp baking powder.
  • Gradually add ¼ cup water to make a thick, smooth batter.

Step 3: Fry the Aloo’r Chop

  • Heat oil in a deep frying pan over medium heat.
  • Dip each potato patty into the batter, ensuring it is well coated.
  • Carefully place the coated patties into the hot oil.
  • Fry until golden brown and crispy, turning occasionally.
  • Remove and drain on paper towels.
