  • 1 teaspoon Chana Dal (Split Chickpeas)
  • 8-10 Curry Leaves
  • 2 Green Chilies slit
  • 1 inch Ginger finely chopped
  • 1/2 teaspoon Turmeric Powder
  • a pinch Asafoetida (Hing)
  • 1/4 cup Roasted Peanuts
  • to taste Salt
  • 2 tablespoons Oil
  • Fresh Coriander (Cilantro) for garnish

Instructions

Prepare the Sevai:

  • Bring a large pot of water to a boil. Add a teaspoon of oil and a pinch of salt to the water.
  • Add the rice vermicelli and cook according to the package instructions until al dente, usually 2-3 minutes.
  • Drain the sevai and rinse under cold water to stop the cooking process. Set aside to let it dry slightly.

Temper the Spices:

  • Heat oil in a large pan or wok. Add mustard seeds and let them pop.
  • Add the urad dal and chana dal. Sauté until they turn golden.
  • Stir in the slit green chilies, chopped ginger, curry leaves, and asafoetida. Fry for a few seconds until aromatic.
