- 2 cups Mixed vegetables (cauliflower, potatoes, peas, carrots) finely chopped
- 2 Onions finely chopped
- 3 Tomatoes inely chopped
- 1 Green bell pepper finely chopped
- 1 tablespoon Ginger-garlic paste
- 2 tablespoons Pav bhaji masala
- 1 teaspoon Red chili powder
- 1/2 teaspoon Turmeric powder
- 4 tablespoons Butter
- to taste Salt
- 2 teaspoons Lemon juice
- Fresh coriander leaves for garnish
For Pav:
- 8 Pav (bread rolls)
- as required for toasting Butter
Instructions
- Cook the Vegetables: Boil the mixed vegetables until soft. Mash them coarsely and set aside.
- Prepare the Bhaji: In a pan, melt butter. Add onions and sauté until translucent. Add ginger-garlic paste and cook for a minute. Add bell peppers and tomatoes. Cook until tomatoes are soft.
- Add Spices and Vegetables: Mix in pav bhaji masala, red chili powder, and turmeric. Add the mashed vegetables and mix well. Add water to adjust consistency. Cook for 10-15 minutes. Finish with lemon juice and garnish with coriander leaves.
