Ingredients

For the Marinade:

  • 1 kg chicken curry cut chicken or drumsticks & cut thighs
  • 1 tablespoon lemon juice
  • 1 teaspoon salt

For the Bhuna Masala:

  • ¼ cup oil
  • 1 tablespoon ghee optional, for richer flavor
  • 1 bay leaf
  • 1 to 2 black cardamoms
  • 4 green cardamoms
  • 4 cloves
  • 2- inch cinnamon stick
  • 2 dried red chilies optional
  • 2 cups chopped onions 2 medium
  • 1 to 2 green chilies slit
  • 1 cup chopped tomatoes or pureed, 1 medium tomato
  • 1½ tablespoon ginger garlic paste divided ½ + 1
  • ½ cup yogurt not sour, fresh curd
  • 1½ tablespoon kasuri methi dried fenugreek leaves
  • ¼ cup coriander leaves finely chopped, for garnish

Spice Powders:

  • ¼ teaspoon turmeric powder
  • ½ to ¾ teaspoon black pepper adjust to taste
  • 1½ to 3 teaspoon Kashmiri red chili powder adjust to taste
  • 2 to 3 teaspoon garam masala adjust to taste
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon fennel powder

Instructions

Step 1: Marinate the Chicken

  • In a large bowl, combine the chicken pieces with lemon juice and salt. Mix well and set aside for 15-20 minutes.

Step 2: Prepare the Bhuna Masala

  • Heat the oil in a large, heavy-bottomed pan over medium heat. Add the ghee if using.
  • Add the bay leaf, black cardamoms, green cardamoms, cloves, cinnamon stick, and dried red chilies. Sauté for a minute until fragrant.
  • Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  • Add 1 tablespoon of the ginger garlic paste and sauté for another 2 minutes.
  • Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

Step 3: Cook the Chicken

  • Add the marinated chicken pieces to the pan. Sauté on medium-high heat for 2-3 minutes until the chicken is lightly browned.
  • Add the remaining ginger garlic paste and mix well.
  • Add the turmeric powder, black pepper, Kashmiri red chili powder, garam masala, coriander powder, cumin powder, and fennel powder. Mix well to coat the chicken with the spices.
  • Reduce the heat to medium-low and add the yogurt. Mix well and cook for another 5 minutes, stirring occasionally.

Step 4: Simmer and Finish

  • Cover the pan and cook on low heat until the chicken is fully cooked and tender, about 20-25 minutes. Stir occasionally and add a splash of water if the masala starts to stick to the pan.
  • Once the chicken is cooked, add the kasuri methi and mix well.
  • Taste and adjust the salt and spices as needed.
  • Garnish with chopped coriander leaves.

Step 5: Serve

  • Serve the Chicken Bhuna Masala hot with naan, roti, or steamed rice.
